The 2026 Taitung Slow Food Festival, themed “Super Taitung Table,” centers on the spirit of “Super Taitung” — highlighting the region’s most iconic local ingredients while challenging conventional perceptions of Taitung cuisine. Through innovative cooking techniques and unexpected ingredient pairings, local chefs reinterpret familiar flavors and create a dining experience that moves beyond tradition toward the future of Taitung gastronomy. As the first Slow Food Festival of 2026, this edition also responds to the “Taitung Expo” initiative, transforming the philosophy of slow food into a living showcase of Taitung’s “Slow Economy.” Visitors are invited to the Taitung Old Railway District to experience how this quiet yet resilient land continues to cultivate sustainable cultural and agricultural practices. Ultimate Ingredients, Resilient Terroir Taitung’s diverse microclimates and landscapes have given rise to a rich variety of unique local ingredients. “Super Taitung Table” focuses on signature products deeply connected to the region, including betel leaf, roselle, red quinoa, maqaw, swordfish, and mahi-mahi. Through culinary creativity and professional craftsmanship, these ingredients are pushed beyond their conventional uses, transforming traditional and Indigenous everyday foods into contemporary dishes with bold and unexpected flavors. More than a culinary experience, the festival is also a tribute to Taitung’s biodiversity and food heritage. From the Table to the Slow Economy A key goal of the 2026 Taitung Expo is to present the tangible results of Taitung’s long-term commitment to developing a “Slow Economy.” Within this larger framework, “Super Taitung Table” serves as one of the expo’s most immersive sensory experiences. Echoing the “Super Taitung – Future Supermarket” curatorial theme, the festival showcases how local ingredients can evolve from traditional agriculture into refined contemporary food culture. Visitors will encounter modern beverages inspired by Indigenous spices, as well as sophisticated desserts created from repurposed local surplus ingredients. Behind these culinary innovations are broader conversations surrounding seed preservation, local revitalization, food education, and sustainable cultural development — all reflecting the resilience and creativity of Taitung’s food culture. Exploring the Limits of Terroir Since its launch in 2017, the Taitung Slow Food Festival has become one of Taiwan’s leading platforms for regional slow food culture. This year’s “Super Taitung Table” focuses on evolution and fusion, venturing into mountains, coastlines, and farmlands to rediscover overlooked food stories and hidden local ingredients. From a single grain of rice to a freshly caught fish, the festival reveals the adaptability and resilience of Taitung’s food systems while inviting participating vendors and chefs to rethink how the Slow Food values of GOOD, CLEAN, and FAIR can remain relevant in a rapidly changing world. Talks, Guided Tastings, and Local Encounters Throughout the festival, Slow Food guides and local practitioners will explore Taitung’s culinary culture through the perspectives of production, craftsmanship, and local markets, revealing how regional flavors can transcend geographic boundaries and influence Taiwan’s wider food scene. Guided tasting tours will lead visitors through the market, offering opportunities to meet vendors firsthand and discover the stories, techniques, and cultural meanings behind each “Super Taitung” dish. In addition, the “Slow Super Farmers Market,” featuring premium local agricultural products, will take place alongside the festival, allowing visitors not only to taste Taitung’s flavors, but also to bring them home. Admission is free. To promote sustainability, no disposable tableware will be provided on-site. Visitors are encouraged to bring their own utensils and experience “Super Taitung Table” in the purest and most mindful way.
