Queen's Private Kitchen
Meet Queen and her husband Old Wang, who have been living in the East Rift Valley for many years. They are experts in using local seasonal and friendly ingredients to develop various dishes and processed products, and they also set up stalls at various markets in Taitung from time to time. Queen's revival of Tainan flavor is a favorite of many: hand-cut pork belly into small strips, slowly stir-fried over low heat to extract the fat, then add spices, soy sauce, and fried shallots. After the aroma is released, add sugarcane and simmer over low heat until the pork is fragrant, shiny, and not greasy. Serve it over steamed rice and sprinkle with cilantro for a lingering aftertaste.

Queen's Private Minced Pork Rice Floating Fish Chowder
"Rich in aroma, the famous Tainan specialty, Queen's Minced Pork Rice, is made with fresh Taitung pork and red onions, as well as locally-grown sugar cane. It is seasoned with a variety of secret spices and cooked through a multi-step process of stewing, braising, and simmering until the meat is tender and flavorful. The meat sauce is then poured over the white rice, which is infused with the energy of the land and sunlight. The dish is garnished with pickled cucumbers, cilantro, and a braised egg, creating a multi-layered deliciousness that leaves a lingering aftertaste. Floating Fish Chowder, made from silky smooth fish paste that encases chunks of boneless and skinless milkfish, is served in a semi-transparent soup infused with the savory fragrance of dried bonito flakes. The soup is complemented by the crunch of bamboo shoots and the spiciness of ginger shreds. A splash of black vinegar adds a touch of sweetness to this fresh and delicious chowder."
